For the "taco cupcakes", you simple put a wanton wrapper in the bottom of a muffin tin, layer with toppings and repeat until full. I cooked up some ground turkey with taco seasoning and assembled my ingredients. Mine had meat, black beans, and cheese and Ryan's were the same except with refried beans instead of black beans.
We recently had taco night at our house and I saw an idea on Pinterest to use wanton wrappers and make "taco cupcakes" instead of using tortillas for a low carb taco night. So we decided to try it out. Ryan loves jalapeno poppers so I looked up how to make them and saw a TON of different recipe options. I tried to make them several different ways (one each). One of them was with a string cheese inside a jalapeno wrapped in a wanton wrapper and then dipped in breadcrumbs. Another was cream cheese and shredded mozzarella inside half a pepper dipped in breadcrumbs. I also tried one that suggested instead making a cream cheese ball with jalapeno pieces or slices inside it. Just for fun I also tried a breaded string cheese with no pepper (like a fried mozzarella stick). I assembled them all and baked them and this is what I got. The two on the top left are cream cheese inside the half pepper, below that is the cheeseball, bottom left is the mozzarella stick (that just melted into a cheese crisp, LOL) and the big monster top right is a whole pepper with a cheesestick inside it. I ate the cheeseball and gave the poppers to Ryan who happily ate them even though they weren't the prettiest. I'll say the biggest annoyance was trying to get the breadcrumbs to stick to the peppers - I'll have to work on that next time. Just bake at 350 until the cheese is melted and it's nice and hot. I used two different kinds of cheese on top so we could easily tell which had refried beans and which had black beans. Ryan is a huge fan of guacamole and we happened to have an avocado in the fridge. I've never made guac before but I figured it can't be that hard right? I scooped it out of the peel, tossed the pit and piled on a few other ingredients from the fridge. After everything was mashed up and mixed together, it occurred to me that I could put the guac back in the avocado peel (shell?) and it would be an adorable guac boat. Once the "taco cupcakes" are done, just add all your favorite toppings and eat up! This might actually be one of my new favorite ways to eat tacos! Last but not least, I was thinking about what to do with the leftover wanton wrappers and I thought they might make perfect little cinnamon sugar cream cheese roll ups. I sprinkled them with cinnamon sugar, added some cream cheese, rolled them up and baked them. They were a neat idea but it didn't occur to me that without extra sugar, the cream cheese isn't actually that sweet. Good thing I only made two little rollups so I didn't really waste anything. It sure is fun to try new things. Also - I think I'm starting to like avocados - not that thrilled with them plain but the guac was pretty tasty!
