Today's task: Cook enough food for breakfast, lunch and dinner for Ryan and I for the next 5 weeks.  Here's the recipes i chose:

Breakfast: Banana Bread Muffins, Breakfast Burritos
Lunch: Chili, Buffalo Chicken Casserole (new recipe)
Dinner: Quiche, Pop-up Pizza Pie, Chicken Enchilada Casserole, Stovetop Sausage Mac N Cheese, Seafood Casserole, Italian Meatball Burgers, Meatball Sub Casserole, Chicken Risotto, Apple Meatloaf, Spaghetti Pie (new recipe) & Tuna Noodle Casserole
Other: Dog Treats for Willow :)

I decided what order to cook the recipes in based on what meats was in them and also trying to order them so that I wouldn't have multiple recipes that need to go in the oven at the same time.  Then i just started cooking and kept going until everything was made.  It took quite a while this time (about 11hrs) but I cooked for 5 weeks instead of 4 and Ryan was only helping for part of the day (the rest of the time i was on my own).  Here's a few pics of what I made:

My fridge was having a hard time keeping everything cold enough with the amount of food i cook so now I started using a cooler.  I put the food in the cooler to cool down, then move it to the fridge and then finally the freezer.  Helps make sure my fridge and freezer don't get too warm.

Seafood casserole, it has wild rice, shrimp, crab, mushrooms, green pepper, onion, etc.

Doggie Treats! These are from a cookbook I have and these are the January treats.  Willow tested them and she strongly approved (probably because they have peanut butter in it - her favorite)!

Then at the end of the cooking marathon, i was rewarded with the sight of my chest freezer - packed full and ready to feed us for the rest of the month.  Cooking all at once is super exhausting...but so worth it to me!

Wow, you are super organized and ambitious Makes me realize I need to be this organized in other areas of my life. Roger does all the cooking in our house. Enjoying your blog!

Thanks Susan! I've found that after a long day of work we're both just too tired to cook. But if the meals are just in the freezer (or in the fridge thawing), Ryan will pop one in the oven and dinner will be ready shortly after i get home :) Otherwise we tend to eat out a lot which gets expensive. Glad you are enjoying my blog :)
