Ok so this recipe isn't quite as healthy as the others I've posted - but we needed a nice dinner together that wasn't too horrible for you or too expensive. Here's how I managed it....
This meal really tasted great for how easy it was and it was still healthier than pizza or a greasy burger! Get a couple steaks and sprinkle with pepper and sea salt, grill until medium rare or however you like them cooked. Gather the ingredients for the sauce:
I used the Knorr Bernaise sauce mix. To make enough for two people, I used 5 tsp of the mix (about half the package). I used the amount of milk the package says but I used unsweetened almond milk to cut down the calories. It says to use an absurd amount of butter but instead I used 1 tbsp of Margarine (I think it calls for 4 tbsp of butter?). The sauce came out plenty creamy and buttery.
Mix the sauce mix, milk and margarine in a small sauce pan and cook until it gets bubbly and thickens up. I was a little worried it wouldn't thicken since I used almond milk and only a little margarine but you can see how thick it looks. While that was warming, I put the crab meat in another pan with just a small amount of margarine/butter and heated it up. Ryan likes canned asparagus better than fresh so I laid out a bed of canned asparagus, topped it with his steak, added 1/4 cup of crab meat on top and drizzled (or tried to drizzle, it was thick) the Bearnaise on top. I had broccoli with mine since I don't like asparagus and I didn't get the yummy cheesy potatoes you see with Ryan's. But it was still super delicious :) I'd say the whole dinner took about 20mins to put together!
Tip for the potatoes: Since I've been avoiding most carbs but Ryan still wants to have some sort of rice or potatoes with his meal, I make a big batch of cheesy hashbrown potatoes (shown) or mashed potatoes or rice or couscous and then I pre-portion them in muffin tins and freeze it. Whenever I need a carb side for him, I just pop one in the microwave for about two mins and that's it!!
