Easter Sweets

I know I'm a week behind but I still wanted to share my Easter treats and birthday sweets with you guys.  For those who don't know, my birthday was on Easter this year.  Combined with the fact that I was on a strict diet for Bikini Bootcamp, I was ready to have a BIG cheat day for my birthday.

I had also seen a bunch of cute things on Pinterest for Easter desserts and snacks.  So I decided I could make 1 or 2 fun treats each week.  I would freeze a few servings and then the rest would go to work with Ryan or I.  I didn't take pics of all the things I made unfortunately but here's everything I made (it all was DELICIOUS).  Click on any of the pics to go to the original recipe.

Carrot Cake Cheesecake - absolutely amazing!! Also, it freezes well as long as you freeze before frosting and then just frost it before serving.

Pretzel Birds nests - they used chow mein noodles but I like the salty pretzels.  I also added some peanut butter chips to the marshmallow mixture when melting...just because I'm obsessed with peanut butter, heehee.

Cadbury Magic Bars - they may not have been the cutest but they are delicious as any magic bar I've ever had.  I tried to up the game by putting actual cadbury cream mini eggs on top but that's what got weird looking when they melted
My original plan was pretty good but I started letting myself have a bite or two as I was making things...and I think it set off some crazy sugar cravings.  I ended up having at least one serving of each dessert as I was making them and sometimes a nibble here and there as I was making them too!  I ended up sending one small plate to my mother-in-law's for their Easter desserts and then I sent the other small amount of frozen treats to a friend at work who was also dieting.  But I saved that last chunk of carrot cake cheesecake for me and Ryan.  It was SOO good. 

Ryan ended up driving to his mom's for Easter day to help paint his mom's house so I had a quiet little Easter dinner on my own.  I happened to have a container of 1/2 green bean casserole and 1/2 cheesy potato casserole in the freezer along with some frozen Honeybaked Ham.  I heated those up and cooked some crescent rolls and even a single serving of sweet potato casserole.  That was the 1st time I had ever tried sweet potato casserole and it was pretty tasty!  To make a single serve, I just microwaved one sweet potato until tender, mashed it like mashed potatoes, mixed in cinnamon and nutmeg, then put it in a small container and baked for a few mins with marshmallows on top.
