I've got another tasty dinner recipe for ya! This time I made a Cream Cheese Stuffed Chicken (inspired by this original recipe: http://400caloriesorless.com/?p=9103) and some baked parmesan zucchini (inspired by this original recipe: http://www.ambitiouskitchen.com/2012/08/baked-parmesan-zucchini-chips/). The zucchini are probably my new favorite side dish, they are SOO good. The biggest change I made to the chicken was to add a little marinara and mozzarella on top since it seemed a little plain to me - I guess I like things saucy. Next time, I think I would reduce the amount of cream cheese filling and use a larger piece of chicken (to get the same calories but more meat). The portion shown above is 4oz and I prefer 6oz for dinner. It's really not that small but on a huge dinner plate it looks tiny. So I adjusted the recipe below to show 6oz. For the zucchini, she suggests adding a little bit of crushed red pepper. I never really cooked much with crushed red pepper since I'm not a huge fan of spicy foods but BOY OH BOY did it amp up the flavor of this side! They were absolutely delicious. I cut mine nice and thick (at least 1/4") and I was fortunate that the zucchini in season were pretty large. But if your zucchini is tiny, just slice it long-ways instead of narrow and you can get big slices too.
