- Onion Bagels
- Plain/Reduced Fat Cream Cheese
- Sun-dried Tomato Pesto or spread
- Sea salt or Kosher Salt
- Balsamic Vinegar
- Fresh Arugula or baby arugula
- Fresh Mozzarella (a big log you can slice or the little pearls)
- A rotisserie chicken (or you can cook some chicken breasts up yourself but this was easy and ensured it would be nice and moist)
Ryan has been such a good sport about eating all the healthy new recipes I've been trying out so I decided to try and make him something special for lunch this week. Nothing too crazy, but something he would REALLY like and that would be out of the ordinary compared to what I usually pack for him. It all started with a BOGO sale at Publix (gets me every time...) Last week Publix had BOGO Sun-dried tomato pesto and spread and Ryan really likes sun-dried tomatoes so I picked some up even though I wasn't sure what to do with it yet. Then I started thinking about how much he likes arugula and fresh mozzarella and the idea for this sandwich came together. Ingredients: Toss 1/4 - 1/2 cup baby arugula with around 1/2 tsp Balsamic vinegar and a dash of salt. Layer on one side of the bagel and top with desired amount of fresh mozzarella. Spread your cream cheese mixture on the other half of the bagel. Add the rotisserie chicken (one chicken is enough for at least 4 sandwiches) and assemble the sandwich, yum! I threw in some pita and hummus along with a pickle and he was one happy camper :)
