I have been getting seriously adventurous these days...while I was on my strict bootcamp diet I was REALLY craving some pizza. Then I saw this recipe on pinterest for pizza with a cauliflower crust. Click the pic to see the original recipe.
I was pretty desperate at the time so I figured, why not? You basically blend up raw cauliflower into a rice like texture, boil it briefly and then squeeze out the water. Add some cheese and spices and spread into a crust. First you bake the crust on it's own and then add sauce, toppings and cheese.
Just bake 5 mins longer or until cheese is all melted and that's it! It wasn't the fastest but then again, homemade pizza is never that quick unless you premake and freeze them. It wouldn't pass a blind taste test and fool you into thinking it was a regular crust but it was pretty good. It was sturdy enough to pick up, had a little crispness to it and a mild flavor. If you are trying to avoid bread (or are gluten free), try this cauliflower crust - I think you'll be pleasantly surprised!
