BBQ Turkey w/ Dill Potato Salad

Previously, I made Ryan some delicious sundried tomato and arugula chicken sandwiches.  I wanted to make him some more awesome lunches this week but I needed a new idea.  Thus - the BBQ turkey sandwich.

Start by gathering the following ingredients:
  • Onion Buns or your favorite sandwich holder
  • Fried Onions
  • Horseradish/Bloomin' Onion sauce
  • BBQ Sauce
  • Spicy Pepperjack Cheese (I also saw a smoked bacon cheddar that sounded good)
  • 4oz Sliced Deli Turkey

I tossed the turkey in some BBQ sauce so that it wouldn't be dripping with sauce but should be plenty moist.  Feel free to add more if you prefer.  Spread the horseradish on the top bun.  Top your turkey with the cheese and fried onions and that's it!  Just try not to eat all the fried onions like potato chips after you're done...that one's always hard for me to resist, LOL.

That's it?  Just a sandwich?  Ya right!  You know I didn't send him with just a sandwich.  I don't know about you but if we're having BBQ, I love me some potato salad to go with it!  And of course Ryan always wants a pickle.  I even mixed up some instant chocolate pudding for him.  He doesn't eat many snacks throughout the day so he is pretty darn hungry at lunch time.

Also, I'm really loving these new Ziploc divided containers.  The lids actually seal each compartment separately so even if this gets turned upside down, he won't end up with pudding in his potatoes!  You can get them on Amazon if you want to try them.
